5 C black beans, cooked (approx. I didn't measure)
1 can Rotel tomato
1 14 oz can V8
4-5 garlic cloves, diced or minced
1 red onion, chopped
1/2 bunch cilantro, stemmed
1 box vegetable broth
Mix all ingredients, bring to a boil then simmer until tender (about 1 hour).
Serve with cotija cheese. This is my favorite cheese for so many of the soups I make. Love it! (Around here I can only find it at Safeway.)
